Mushrooms: Portobello Garlic Roasted

Portobellos will need to marinate for at least 30 minutes before roasting.

YIELD 2 servings

INGREDIENTS

2 large portobellos, tops cleaned and stems cut out

MARINADE (whisk together):
3 large garlic cloves, pressed using a garlic press
2 tbsp olive oil
1/4 tsp kosher salt 
freshly ground black pepper

PREPARATION

1. Brush MARINADE all over the portobellos and place them in a small roasting pan. Let sit for 30 minutes (or several hours).

2. Oven rack for roasting should be on the second level from the bottom of the oven. Heat oven to 500°F.

3. With stem sides down, roast portobellos for 6 minutes.

4. Flip portobellos and roast another 6 minutes. Serve warm or room temperature.
